Chestnut Vanilla Waffles with Cinnamon Ginger Apples

Time: 30-40 minutes

Yield: 4-8 servings



23 cup unbleached, all purpose flour

• ¼ cup chestnut flour*

• 1 teaspoon baking powder

• 1 ripe banana

• 1 tablespoon honey*

• 2 eggs*

• 1 cup milk

• 1 tablespoon vanilla

• Pinch of sea salt


• 2 apples*

• ½ teaspoon cinnamon

• ¼ teaspoon ground ginger

• Pinch of sea salt

• 1 tablespoon honey*

• 4 tablespoons butter


1. Pre-heat waffle iron.

2. Mix flours and baking powder together in a large bowl.

3. In another bowl, mash banana and honey. Mix in eggs eggs. Add in milk, vanilla, and salt. Gently stir to combine.

4. Combine wet and dry ingredients, mixing until combined.

5. Divvy portion into waffle iron and cook following manufacturer’s instructions. Repeat until all batter is cooked.

6. While waffles are cooking, slice apples and season with cinnamon, ginger, salt, and honey. Stir to coat all the slices.

7. Melt butter in a pan over medium. Once butter is melted, add spiced apples and cook until softened (3-5 minutes).

Top waffles with apples and pan sauce. Leftover waffles can be frozen and re-heated in a toaster oven.
