The Texas State Fair has begun and that gives us an indication of what's in in the deep-fried world of fair fare and food on a stick.
What is available at the Texas State Fair usually drifts over the Toad Suck Daze and the Arkansas State Fair in a year or two.
It's amazing how we in the South can deep-fry healthy food to turn it into to something scrumptious, caloric and cholesterolic.
For example, this year at the Texas State Fair, you can sample:
Deep-fried collard greens
Avocado fries with jack cheese, bacon crumbs, cilantro and jalapeno.
Deep fried creamy spinach.
Deep fried Nutella.
And there's the exotic, sticky and weird:
Deep fried bubble gum
Deep-fried spaghetti and meat balls
Deep-fried cool ranch pizza
Deep-fried shrimp and grits
Deep-fried Cuban roll (pork shoulder with ham and Swiss cheese and spices)
Deep-fried Thanksgiving dinner (ball of stuffing and diced turkey, dipped in creamed corn, rolled in corn meal and served with brown gravy and cranberry sauce).
Deep-fried King Ranch casserole (pictured here from dallasnews.com served in the shape of Texas but I imagine can be adjusted for other states).
And millionaire pie (fried with cream cheese pineapple and Texas pecans).
And they say most of this stuff is to die for.
